It was my husband’s early birthday celebration with family over the weekend, and I decided to cook a feast! Usually I don’t make such big portions, so I was worried about the quality. But I kept reminding myself that I’ve been cooking for over a decade now and I’ve improved in cooking slightly larger portions since living with my husband. Back then I was confident in cooking single servings, but now I can do at least 2-4 servings. I’m so confident that I have a habit of eyeballing and never taste testing before serving. Anyways… to my surprise, everything turned out really well!

Not pictured: the spicy rice cake that I made too

These are all of my favorite dishes to cook again and again. They are easy too! Usually I don’t repeat recipes, but if I were to choose it would be all of these:

  1. Baked Portuguese chicken rice
  2. Baked black pepper porkchop rice (with scrambled eggs), extra sauce on the side
  3. Tomato beef macaroni soup
  4. Satay chicken
  5. Shaken beef
  6. Creamy mushroom bacon udon
  7. Miso cod
  8. Creamy spicy rice cakes

I actually don’t make curry or fried rice very often.

Here are some tips on making this all happen:

1. Prep the night before
2. Marinade the day before as well

Prepping took 5 hours because of not only chopping and marinading, but also washing and trying to fit everything back into the fridge.

Cooking also took the same amount of time, but I was happy that I finished on schedule! I even had some time in between to wash dishes and other things.

This was a rough order of how I wanted to tackle all of the cooking that day ^
We’ve had so many leftovers…this is day 3 of trying it feeling like a buffet where we put together our own plate for lunch or dinner. But it’s all very yummy, so we’re not complaining.
