The first Taiwan drama I’ve ever watch on my own was “Corner with Love” 「轉角*遇到愛」。

The plot revolved around the male lead cooking oyster omelettes at a night market stall.

This was during a time when I was already getting into Taiwanese music. So this made me dive deeper into Taiwanese dramas, food, and culture.

Oyster omelette is essentially my introduction to Taiwanese cuisine~

Ingredients

oysters 蠔
taiwan bokchoy 台灣白菜
2 eggs 蛋
1/2 cup sweet potato flour/tapioca
starch 地瓜粉/蕃薯粉
1/4 cup rice flour 粘米粉
1 tbsp corn starch 玉米粉
1 cup water 水
white pepper 白胡椒
formosa dipping sauce 海山醬

Directions

  1. Make the batter by mixing sweet potato flour, rice flour, and corn starch with water thoroughly. 將地瓜粉,粘米粉,玉米粉,和水攪拌均勻。
  2. Rinse the oysters and pat dry with a paper towel. 將蠔沖洗乾淨,然後用紙巾拍乾。
  3. Under high heat, add oil to the pan. Add oysters to cook for 2-3 minutes. Then add some batter, spread cracked eggs, and also boychoy. Season with white pepper. 在大火中放鍋,倒入適量油。放入蠔煎2-3分鐘。然後加入一些麵糊,撒上打散的雞蛋和白菜。最後撒上白胡椒粉調味。
  4. Once the bottom is golden brown (~4minutes), flip the omelette. Cook for the same amount of time, then take off heat. 變金黃色後(約4分鐘),翻面。再煎同樣的時間,然後關火。
  5. Serve with formosa dipping sauce*. 在一個盤子上把它倒出來,淋上海山醬。

Note

  • This recipe makes 2 big oyster omelettes.
  • The quantities for the batter are forgiving – Potato starch gives the chewiness (QQ彈口). Rice flour gives a bit of crisp. Corn starch binds everything together.
  • Alternative sauce: mix together miso paste, ketchup, sweet chili sauce (甜辣醬), and water.
