Honestly, I think this is one of the best things I’ve ever made and my husband completely agrees. It was so good that even I went back for seconds! As a self-proclaimed Queen of 30-minute meals, this was simple to make. This was also my first time using panchetta! It’s definitely not a classic carbonara, but more of a fusion of carbonara and cacio e pepe? It’s amazing how creamy this pasta dish was from a few simple ingredients.
Ingredients
- pasta (spaghetti)
- panchetta
- egg yolks
- parmesan cheese
- salt and black pepper
- Optional: butter, oil, garlic, vegetables, extra protein (shrimp, shredded chicken)

Directions
- In a pot, cook pasta until al dente and save some of the starchy water.
- Whisk egg yolks and parmesan together. (For 3~4 servings, I used 3 eggs).
- Put sliced panchetta on a pan. Then turn on the heat and cook until crispy.
- Using a little bit of butter and diced garlic, cook extra protein and vegetables with salt and pepper.
- Add spaghetti to the pan, whisk in the egg and parmesan mixture, add some starchy water. Season with salt and lots of black pepper.
- Garnish with some more cheese and pepper.
